BAKED BAY SCALLOPS

Baked bay scallops are generally found on the east coast. They can also be found frozen in other parts of the country. They range from 100 to a pound to 30 a pound and are sweet and tender. Srves 4

INGREDIENTS

7 tbsp butter

1/2 cup bread crumbs

3 cloves garlic (minced)

2 tbsp onion (minced)

1/4 cup parsley (chopped)

2 tbsp white wine

2 tbsp lemon juice

1/2 tsp salt

1/4 tsp pepper

2 tbsp onion (chopped)

1 1/2 lbs bay scallops

8 oz mushrooms

DIRECTIONS

1. In a bowl combine a mixture of 4 tbsp butter, bread crumbs, garlic, onions, parsley, wine, lemon juice, salt and pepper and chill for a least 1 hour.

2. Preheat oven to 450f and butter 1 1/2 quart casserole pan with 1 tbsp butter.

3. In a large sauce pan melt remaining butter 2 tbsp over medium heat. Cook chopped onions for 2 minutes until tender. Add scalops and mushroms and cook briefly.

4. Place scallop mixture evenly in pan and arrange bread crumb mixture over scallops. Bake until butter is hot and bubby serve immediately.
