Baked Corn Casserole
Baked corn casserole is a tradition that is firmly held to by many households. This is a side dish that will enhance the flavor of any turkey or ham meal. This version of the corn casserole that so may families love is created by combining yellow, white and cream corn along with the addition of two different types of cheese and a cracker crust. If you like corn, you will enjoy making this part of any family dinner menu.
This baked corn casserole is another one that you can prepare ahead of time and store in the fridge until it is time to bake. You might want to hold off on the cracker crumbs until just before baking, but otherwise it will hold in the refrigerator just fine overnight. You see, that is the beauty of most casseroles, the easy and versatility as well as flexibility that is provided by placing all the ingredients into one nice casserole dish.
Corn is rich in magnesium, phosphorus, manganese, zinc, iron, copper and selenium, with small traces of potassium. It also contains Vitamin B6, Thiamin, Riboflavin, Folate and Niacin, so you know it is good for the body. That means that a lot is packed into just one serving of this beautiful vegetable.
INGREDIENTS
1 stick butter divided + 1 tbsp of butter
1/2 cup green onions (white and green parts)
1/2 cup celery (chopped)
1 green pepper (seeded and chopped)
1 can yellow corn (15 oz drained)
1 can white corn (11 oz drained)
1 can yellow cream style corn (15 oz)
3/8 cup evaporated milk
1 cup crackers (ritz type crushed)
3/4 cups swiss cheese (shredded)
3/4 cups cheddar cheese (shredded)
2 large eggs (lightly beaten)
1/2 tsp salt
1/2 tsp pepper
DIRECTIONS
1. Set oven to 350f and spray a 2 quart casserole dish with cooking spray.
2. In a skillet Melt 1 tbsp butter and add onions, celery, and bell pepper and cook for about 5 minutes until Crisp-tender.
3. In a small skillet melt 6 tbsp of butter. In a large bowl combine yellow, white, cream corn, milk, cheese, eggs, salt and pepper along with 6 tbsp of melted butter. Add cooked vegetables and place in casserole dish.
4. Sprinkle cracker crumbs over casserole. Melt 2 tbsp of butter and drizzle over cracker crust. Bake for 30 minutes until crumbs are browned and crisp.
