Beef Nacho Casserole
Beef nacho casserole recipe; wait until your kids get their forks into this one. They are sure to love it because most kids enjoy the full flavors of tomatoes and sour cream all combined with chili powder. Of course, if you have some who prefer a milder taste, you can always adjust the ingredients to be more to their liking. There is nothing wrong with the adults in the family adding their bits of seasoning right at the table in order to provide the kids with something they can appreciate.
One thing about this beef nacho casserole recipe is that it is very much like what you would find at a Mexican restaurant, as far as the flavors are concerned. If you have a large family to feed, you will appreciate that you are not having to stretch your budget in order to provide them with the wonderful experience of eating a Tex-Mex meal.
Your family will have the delight of biting into tomatoes and ground beef as well as their favorite style of cheese and along with the crunch that can only come from tortilla chips. This may be the key to getting them to the table on time.
INGREDIENTS
1 pound ground beef
1 1/ cups fresh chopped tomatoes
3/4 cup sour cream
1 tsp chili powder
2 cups tortilla chips (crushed)
2 cups shedded cheese (colby or monterey jack)
DIRECTIONS
1. Set oven to 350f
2. Place ground beef in a large skillet over medium heat and cook breaking it up until brown. Drain grease and remove from heat. stir in fresh tomatoes and sour cream along with chili powder.
3. In a 2 quart casserole dish layer half of ground beef mixture and half of tortilla chips and half of cheese.
3. Next do the same with the other half of ingredients for a second layer.
4. Bake for 20 to 25 minutes until heated through and cheese is melted and serve.
