Blueberry French Toast Casserole

Blueberry French toast casserole will have your mouth watering before you even get it into the oven. Who doesn't love the taste of sweet blueberries, especially when they come straight from the oven steaming with all the goodness of cream cheese, French toast, and of course, maple syrup. I can just taste this one now, and cannot wait until I can get into the kitchen to whip up some of my own.

This blueberry French toast casserole should be made using fresh blueberries because when you use frozen blueberries you will find that the juice that is created will turn the bread to a lovely shade of purple during the baking process. Since this does nothing to affect the flavor, if you have no other choice, and like the color purple, you can go right ahead and use those cold berries.



INGREDIENTS

1 loaf french bread (crust removed)

1 8 oz package cream cheese (cubed)

1 cup blueberries

12 large eggs (beaten)

2 cups milk

1/2 cup maple syrup



DIRECTIONS

1. set oven to 350f

2. Cut the french bread down to 1 inch cubes and place 1/2 of the bread in a 9-by-13 casserole dish. Then place the cubed cream cheese on top of the bread. At this point evenly spread the blueberries then cover with the rest of the french bread.

3. In a large bowl mix together the milk, eggs, and maple syrup and pour over bread mixture cover and refrigerate overnight. remove from refrigerator for 35 minutes before baking.

4. Cover with cooking foil and bake for 30 minutes. Uncover and bake for additional 30 minutes until set.

5. spoon or slice and serve with blueberry sauce.
