Cheese And Spinach Casserole
Cheese and spinach casserole may be a side dish, but it packs a punch. INGREDIANTS
3 tbsp butter (melted)
2 packages of fresh baby spinach (9oz each)
1/4 cupflour (all purpose)
1 cup cheddar cheese (shedded)
1 tsp salt
1/4 tsp pepper
1/8 tsp nutmeg (ground)
4 large eggs (beaten)
1 cup milk
1/2 cup fine dry breadcrumbs
DIRECTIONS
1. Set oven to 350f and spray a 1 1/2 quart casserole dish with cooking sray. Place fresh spinach into large collender and pour boiling water over them to wilt and then drain.
2. In a large bowl toss wilted spinach with flour, cheese, salt and pepper, and nutmeg. Then place into caserole dish. Mix eggs and milk together and pour over spinach mixture.
3. Bake uncovered for 25 to 30 minutes until set. Mix together breadcrumbs and melted butter and sprinkle over casserole and bake for another 5 to 10 minutes until breadcrumbs are crispy.
