CHEESE APPLE COBBLER
This cheese apple cobbler is perfect for a chilly evening. There are several steps to making this dish but well worth it. The recipe calls for a fruit layer a cobbler topping and a vanilla sauce. I'm sure cheese apple cobbler will be a hit at your family table Serves 6
INGREDIENTS
FOR FRUIT LAYER
1 1/2 pounds cooking apples
1/2 cup sugar
2 tbsp quick-cooking tapioca
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 1/4 cups water
2 tbsp butter
1 cup sharp cheddar cheese (shedded)
COBBLER TOPPING
1 cup flour (all purpose)
2 tbsps sugar
1 1/2 tbsps baking powder
1/4 tsp salt
1/3 cup cold butter
1 egg
1/4 cup milk
VANILLA SAUCE
2 cups milk
1 tbsps corn starch
1/4 cup sugar
2 tsps vanilla extract
1 tsps butter
DIRECTIONS
1. Set oven to 425f and spray a shallow 8 or 9 inch casserole dish with cooking sray.
TO MAKE FRUIT LAYER
1. Peel, core, and slice apples. Place in a medium bowl. Add sugar and mix well. In another medium bowl combine tapioca, cinnamon, nutmeg, water, and butter. Over medium-high heat cook, stirring until mixture boils. Add apples and remove from heat. Let stand for 5 minutes. Place in casserole dish and top with cheese.
TO MAKE COBBLER TOPPING
1. In medium bowl mix together flour, sugar, baking powder, and salt. with a pastry blender add butter and blend until mixture resembles coarse crumbs. Then add egg and milk and stir until you have a soft dough.
2. Drop spoonfuls of topping onto cheese layer. Bake for 20 to 25 minutes uncovered until cobbler is lighty browned.
TO MAKE VANILLA SAUCE
1. While the cobbler is baking. In asmall sauce pan mix together milk, corn starch, and sugar. Bring to a boil over medium-low heat while stirring until slightly thickened. Then stir in vanilla and butter.
