Poultry casseroles using chicken offers such a wide varieties of choices its mind-boggling. You can cook it whole or cut it into pieces. The bone can be left in skin on or off. Chicken is a favorite with kids and adults alike.

One of my favorites is chicken cacciatore make with peppers, onions, boneless, skinless chicken breast flavored with herbs and wine.

chicken cacciatore is a well seasoned dish made with fresh vegetables and served on a bed of precooked polenta.

chicken cheese casserole is made with semifirm asiago cheese and fresh mushrooms. The recipe calls for herb stuffing which will top the casserole.

havarti stuffed chicken uses havarti cheese and herb butter to create a luscious sauce filling for the rolled chicken breast.
