SEAFOOD CASSEROLES

Seafood casseroles are a real comfort food whether you use fresh, canned, or frozen ingredients in the recipes. Even today these good-quality ingredients are easy to find. I always keep my pantry stocked.

In a pinch canned tuna, salmon, or crab come to the rescue. In this section you find a variety of shellfish and fish recipes for all bugets and taste. One recipe is for a poor man's lobster casserole which uses butter baked cod fillets fresh or frozen.

One recipe that illustrates stretching the flavor is the lobster macaroni and four cheese casserole which brings this dish to a new level. One of my favorites is baked bay scallops made with fresh scallops. Frozen scallops can be used for people not living on the east coast. The recipe also calls for mushrooms, onion, garlic, bread crumbs, and a little white wine.

baked bay scallops are generally found on the east coast. They can also be found frozen in other parts of the country. They range from 100 to a pound to 30 a pound and are sweet and tender.
