SIDE DISHES
Side dishes have been short-changed for a long time. These recipes are often overcooked and poorly seasoned. That has changed with the plentiful variety of vegetables in the market place to choose from.
Such items as packaged vegetables and fresh mushrooms. As I have said before casseroles can be assembled ahead of time and cooked just before the meal.
These recipes will go well with the main meal or with another casserole. Below you will find a variety of recipes including such favorites as cheesy scalloped potatoes, acorn squash, cheesy baked spinach to name a few.

mushroom rice bake uses wild rice which really brings out the flavor of this side dish. The recipe calls for fresh mushrooms and sliced almonds for that nutty flavor.
