Spinach And Cheese Casserole

Spinach and cheese casserole is just right for you when you are looking for something that is simple to make plus works as a satisfying main dish. When you serve spinach, you just know that you have done something special for you and your family, but when you serve it to your guests, they will understand how much you really do care.

This recipe is made with frozen spinach, ricotta as well as sharp cheddar cheese. It is simple and quick to make and since there are only a few ingredients that you are sure to have on hand anyway, you cannot go wrong when adding it to your menu.

INGREDIENTS

4 large eggs

1 tsp salt

1/2 tsp pepper

1 10oz pacage of spinach (frozen thawed and squezzed dried)

2 cups ricotta cheese

a bunch of green onions (using the green tops)

1 cup sharp cheddar cheese (shedded)

2 tbsp dried dill



DIRECTIONS

1. Set oven to 350f and spray a 1 1/2 quart casserole pan with cooking spray.

2. Place in a large bowl beaten eggs salt and pepper. Add spinach and all the other ingredients stir until blended.

3. Place mixture in casserole dish and bake uncovered for 40 minutes or until center is firm. Let stand for 5 minutes and serve.
